Thanksgiving Side Dish

Tonight I was going through my recipes for Thanksgiving, trying to prepare a grocery list.   One of my most favorite dishes to eat is also one of the easiest to make......Scalloped Corn.  It may not look very appetizing in this picture but it really does taste great!
Here's the recipe:

Ingredients:
15 oz. whole corn (reserve 1/4 cup of the liquid)
15 oz. creamed corn
2 eggs, beaten
5 oz. evaporated milk
1/4 cup margarine, melted
1/4 cup chopped onions
2 cups buttery crackers, crushed
3 cups shredded Swiss cheese
salt & pepper

To the beaten eggs, add the whole and creamed corn, milk, margarine, reserved corn liquid, onions, salt and pepper.  Fold in the crushed crackers and the Swiss cheese.  Pour into a greased, 8" baking dish at 325 degrees for an hour or until the middle is set.

Enjoy!!
