A Cup of Cake

Every once in a while after dinner, I crave something sweet - a dessert.  Desserts in our house don't last more than about a day.  With two teenage boys, a husband with a sweet tooth and a little girl who has her mom and grandma's affinity for something sweet after every meal, a pan of bars, a cake, ice cream all disappear the day they appear.

I think my mom may have come up with a solution for me though.....Cake in a Cup.  Here are the ingredients that are needed:

Any flavor cake mix
An angel food cake mix
Mini chocolate chips (optional)
Combine the two cake mixes.
Stir until well mixed.
If using chocolate chips, now is the time to add them in.
Stir until they are completely mixed in.
To make a one serving Cake in a Cup, you will need a microwave safe cup/mug.
No need to treat the mug/cup with any cooking spray.  Measure out 1/3 cup of the cake mixture and put it in the cup along with 3 tablespoons of water.

Mix well.
Place the cup/mug uncovered in the microwave and heat for 70 to 80 seconds.  The cake will cook and rise in the cup/mug.
Invert the cup/mug on a little plate.
Slowly lift up the cup/mug.
Viola!!  A personal mini cake!  Enjoy!!
