Killer Chicken Recipe

My wonderful friend Lisa has a recipe for THE BEST chicken on the grill.  It's a meal I make every time we "go up north".  This weekend, my parents got to taste this culinary treat and they gave it big thumbs up too.  Here are the ingredients:

1/4 cup peanut oil
1/4 cup white wine vinegar
1/4 cup soy sauce
1/8 cup lemon juice

1/2 cup peanut butter

1 clove garlic, minced

1 teaspoon red pepper flakes

Whisk all of the ingredients together.

Cube 3 to 4 chicken breasts (depending on size).

Put chicken in marinade and mix.  Marinate chicken in sauce 2-3 hours ahead of time in the refrigerator.  I like to marinate mine overnight.

Soak skewers in water for about 30 minutes.

Put the chicken on skewers.

Place the chicken skewers on the grill.

Grill until chicken is done and the sauce turns crispy.

So yummy!!  ENJOY!
