Turkey Quinoa Meatloaf

This recipe definitely fits with the part of my New Year's Resolution to eat better.  It's for Turkey Quinoa Meatloaf.  Quinoa is high in protein, has amino acids and is gluten/wheat free.  When mixed with the ground turkey and other ingredients it makes for a hearty meatloaf.  My usually finicky male eaters - when it comes to meat - love this meatloaf.  Here's the recipe and the "how to":

Ingredients:  ground turkey (20 oz.),
 olive oil, 1 small onion, tomato paste, hot pepper sauce, Worcestershire sauce, 1 egg, ground black pepper, 2-3 cloves of garlic, salt.
First, preheat oven to 350 degrees F.  Then put 1/4 cup quinoa in 1/2 cup water in a saucepan and bring to a boil over high heat.  Reduce the heat to medium-low, cover and simmer until the quinoa is tender and the water has been absorbed.  Set aside.
Heat 1 teaspoon of olive oil and add the chopped onion.  Cook the onion until it has softened.
Once softened, add the garlic and cook for another minute.
Put the ground turkey in a bowl and add the egg, 2 Tablespoons Worcestershire sauce, 1 Tablespoon hot pepper sauce, 2 Tablespoons tomato paste, 1 teaspoon salt and 1/2 teaspoon black pepper.





Then add the onions, garlic and quinoa.

Mix together and make into a loaf shape.  Put in the oven to cook.  Meanwhile, put together the rub on paste.  The ingredients are 2 Tablespoons brown sugar, 2 teaspoons Worcestershire sauce and 1 teaspoon water.



After the meatloaf has been cooking for about 30 minutes, remove from the oven and pour or brush on the paste.
Cook for 20 more minutes and it's ready to enjoy!
