Jumbo Rigatoni/Pumpkin/Spicy Turkey Sausage

Here's another quick recipe for busy evenings.  When you see the ingredients, it may seem a little weird but trust me, it's really good.  Even my very picky 13 year old son asks for seconds!

These are the ingredients you'll need:  asiago cheese, 15 oz. can of pumpkin puree, 1 lb. jumbo rigatoni noodles, bread crumbs, milk, 2 eggs, fresh sage, 4 oz. cream cheese, nutmeg, pumpkin pie spice and spicy turkey sausage links.

Prepare the noodles as directed.
Take the casing off of the sausage and crumble in a skillet.  Brown.
Once the sausage is brown, add 1 teaspoon to 1 Tablespoon fresh sage.  I add based on taste.

Remove the sausage from the skillet and discard the drippings.
Add the sausage to the drained noodles.
In the skillet in which you browned the sausage, whisk together the following:  2 egg yolks, 1 1/2 cups of milk, 4 oz. cream cheese, 15 oz. pumpkin puree, 1 cup shredded asiago cheese, 1/4 teaspoon of nutmeg, 3/4 teaspoon pumpkin pie spice and 1/2 teaspoon salt.
Whisk until smooth.
Pour this mixture over the noodles and sausage.  Stir to combine.
Transfer this mixture to a 13x9x2 inch baking dish.
Sprinkle 1/2 cup of bread crumbs and 2 Tablespoons of asiago cheese over the top.

Bake uncovered in a 350 degree oven for about 20 minutes.  Then serve!
