Stuffed Shells Recipe

Getting a busy family together for supper takes some planning and a willingness to be flexible in the time dinner is served.  Sometimes we eat really early and sometimes we eat really late.  I try to take into account everyone's schedule and on those busy nights, I use my "go to" recipes to get a nutritious and delicious meal on the table before everyone goes their separate ways.

Here is one of those "go to" recipes.  I made it tonight and everyone asked for seconds!

You'll need a package of chicken sausage.  Remove the casings and brown in a skillet.  (After looking at this on-line, this is a very unappetizing photograph!)  You can also substitute turkey or pork sausage for the chicken sausage.
Prepare as directed, one 12 oz. package of jumbo shells.
In a bowl, mix two 4 oz. packages of herb and garlic goat cheese, 4 oz. of cream cheese and two egg yolks.


Mix until combined.
Add this cheese mixture and a package of thawed and drained frozen spinach to the sausage.
Stir to combine.
When the shells are soft, drain them.
Spread some marinara sauce on the bottom of a baking dish - about 1/2 cup.
Stuff about a Tablespoon of the cheese/spinach/sausage mixture into each shell.  Nestle each shell into the pan on top of the marinara sauce.

Pour the rest of the marinara sauce over the stuffed shells.
Sprinkle on some mozzarella cheese.  Cover and back in a 350 degree over for about 30 minutes.  Uncover and back for about 10 more minutes.  Serve!
