M&M Cookie Cups

I love to bake when the weather outside is crummy.  Today while it snowed and snowed and snowed, I made M&M Cookie Cups.  Here's the recipe:

Cream together 1 cup of butter, 1 cup of brown sugar and 1/2 cup of white sugar.
To this mixture, add 1 teaspoon of vanilla, 2 eggs, 2 1/4 cups of flour, 1 teaspoon baking soda and 1 teaspoon salt.
After it's mixed well, add about 1 cup of M&Ms and gently incorporate them into the mixture.  If you mix them too vigorously, the M&Ms will break apart.
In a non-stick muffin tin, press in 1 tablespoon of the dough.
Be sure to press the bottom AND sides to make a little well in the center.
Bake in a 350 degree oven until lightly brown.
Remove from the muffin tin and let cool on a wire rack.  When it cools, the center will drop down, making a mini cup.
Add a little scoop of ice cream and you have a little sweet treat.  It was perfect sweet surprise for my kids after school today!
